build: upgrade gpui-kit to 0.7.3 - #63

Bump the workspace gpui-kit dependency from 0.7.0 to 0.7.3, which also moves the underlying gpui-pre, gpui-base, and gpui-component crates to 0.7.3/0.3.9. No source changes were required; the existing call sites compile against the new API unchanged.
Add FieldAssist Help on every desktop platform. On macOS the Help menu follows Workflow and leaves About in the application menu. Measure tool-dock tab widths with the text system so a debug build can construct the window. Refresh Cargo.lock.
